So I got a wild hair up my ass and decided I *need* a 1 TB external HD for various reasons. I did quite a bit of research on the enclosure, mostly because I wanted it fanless and to support spinning down the HD b/c I want to leave it connected all the time. I finally settled on this guy: OX922-ICE-MP. Man this is a nice enclosure. It's got the rubber dampers to fasten the HD in place. Actually, this originally worried me a bit since there's no contact with the aluminum case, which means less efficient heat dissipation, but it doesn't seem to be a problem, at least not with the drive I'm using. It's got a solid build. It comes with every cable you could possibly need, including the 9-pin FW800 to 6-pin FW400. On the downside (and this is a stretch), it only works with SATAI/II drives, no PATA (but who really cares) and it has a power brick rather than integrated converter (but that goes for most 3.5" enclosures)
As for the HD, I wanted cheap-ish (1 TB is gonna be $$$ regardless) and a reputable name. So I was mainly looking at Seagates, then I stumbled on the Western Digital Caviar GP WD10EACS. It was <$260 w/ tax & 3 day shipping (took 1 day btw). This drive is soooooo quiet I can barely tell it's on. Even under heavy access it makes only a little noise.
Anywho, if anyone is in the market for a new enclosure or HD, I'd recommend either of these pretty highly.
